Chocolate Espresso Muffins
These muffins are perfect for breakfast or a midday boost. This recipe can be made in one bowl!! Outstanding taste and takes under an hour to prepare, make, and wash your dishes! Since this recipes has few ingredients, use quality espresso, cocoa powder, and chocolate for the best taste. You can also add nuts, vanilla extract, mint chips, anything to alter the final outcome.

Yields: 12 muffins
Ingredients:
1/2 cup (113g) unsalted butter, slightly melted
1/2 cup (100g) granulated sugar
1/2 cup (100g) brown sugar
1 egg
1/2 cup whole milk
1/2 cup espresso or strong coffee, cooled
1 1/2 cups (210g) all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1/2 cup semisweet or dark chocolate chips
Optional chocolate chips or nuts for topping
Steps
Preheat oven to 350°F and grease or line a muffin tin.
Combine melted butter and both sugars in a large bowl. Add one large egg, cooled coffee or espresso of your choice, and milk until homogenous.
Measure and add in all dry ingredients until almost combined. Fold in chocolate chips with a rubber spatula mixing until just combined. Do not over-mix or your muffins will be dense.
Add batter to tin and top with chocolate chips and/or nuts if desired. Bake on the middle rack for 15-20 minutes.
