So you've already made banana bread...
How many times during quarantine have you baked banana bread? I'll be honest my number is pushing double digits. This recipe will help you put a little twist on your traditional loaf while maintaining the quick, easy, and delicious nature of banana bread.
Banana Bread Bars with Cream Cheese Frosting
Total Time: 40 minutes
Ingredients:
Bread
1/2 cup softened butter
1 1/2 cups sugar
2 eggs
1 cup sour cream
11/2 tsp vanilla extract
2 cups all-purpose flour
1/4 tsp salt
1 tsp baking soda
3 bananas (the riper the better)
Frosting
1 package (8oz) cream cheese
1/2 cup butter
2 tsp vanilla extract
About 4 cups confectioners' sugar (or until desired consistency is reached)
(Optional) Top with chopped nuts or fresh banana slices
Steps
Preheat oven to 350°. Using a mixer, or a large bowl, blend together softened butter and sugar. Once combined, add eggs, sour cream and vanilla extract.
In a separate bowl, mix together flour, baking soda and salt. Gradually add to the liquid ingredients. Mash bananas and add into the mixture. Stir well until combined.
Grease a baking sheet (roughly 15"x10") and spread the batter evenly. Bake for 22-28 minutes or until n inserted toothpick comes out dry and clean. Set aside to cool.
Beat together the softened butter, cream cheese and vanilla extract. Slowly add confectioners' sugar until desired thickness is reached. Once bars are cool to touch, frost and add any desired toppings. Store in the refridgerator and enjoy!!
