When life gives you lemons, make lemon bread!

This is a super easy, delicious bread perfect to give as a gift or share as a gathering piece. My family and I are also very much guilty of enjoying this for breakfast.

P.S. This citrusy loaf pairs great with some fresh blueberries and blackberries!





Lemon Loaf with Sugar Glaze

 

Total Time: 1 hour


Ingredients:


Loaf


  • 1/2 cup salted butter, softened

  • 1 1/4 cup of sugar

  • 1 1/2 cups all purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 3 large eggs

  • 1 teaspoon vanilla extract

  • 4 tablespoons of lemon juice (about one medium sized lemon)

  • 1-2 tablespoons of lemon zest (about one medium sized lemon)

Glaze


  • 1 tablespoon of lemon juice

  • 1 cup powdered sugar

  • 1/2-2 teaspoons milk (until desired consistency)


 

Instructions:


  1. Preheat oven to 350°. Grease a 9x5 in. loaf pan.

  2. In a large bowl combine the flour, baking soda, baking powder, and salt. Set aside.

  3. Add the butter and sugar to the bowl of a stand mixer and beat until creamy, about 2 minutes.

  4. Add in the eggs, vanilla, and lemon juice. Mix on low until mixture is pasty. Then, add the dry ingredients. Mix until combined.

  5. Pour batter into prepared pan. Bake for 40-45 minutes, or until toothpick comes out dry and clean. Let cool in pan.

  6. Make the glaze and drizzle over the loaf. Add desired toppings, serve warm and dig in!
